- This yummy squash soup takes 10 minutes to prep and 35 min to cook and combine for a delicious flavor. This dish serves up to six people and is perfect for a cold rainy day. Below is a list of its ingredients:
- 2 tablespoons extra-virgin olive oil
- 1 large yellow onion, chopped
- ½ teaspoon sea salt
- 1 (3-pound) butternut squash, peeled, seeded, and cubed
- 3 garlic cloves, chopped
- 1 tablespoon chopped fresh sage
- ½ tablespoon minced fresh rosemary
- 1 teaspoon grated fresh ginger
- 3 to 4 cups vegetable broth
- Freshly ground black pepper
Black Bean Burger
- This delicious black bean burger has such a great combination of spices and herbs which will create a mouthwatering taste with every bite. This meal takes about 30 minutes to prepare. Here is a list of the exact ingredients.
- 3 cups cooked black beans, drained and rinsed
- ⅓ cup grated yellow onion*, (about 1/2 medium)
- 2 garlic cloves, minced
- 2 chipotle peppers from a can of chipotles in adobo, diced, plus 2 tablespoons adobo sauce
- 1 tablespoon tamari
- 1 tablespoon balsamic vinegar
- 1 teaspoon cumin
- ½ teaspoon sea salt
- ½ teaspoon black pepper

Tahini Zucchini Noodles
- This veggie – based recipe is great if you want a healthier alternative to regular pasta. Another great part of this recipe is the tahini sauce which is a flavorful and perfect seasoning for these zucchini noodles. The prep is a little longer but worth it. Below is a list of ingredients.
- Noodles:
- 2 cups kale, chopped
- 2 medium zucchinis, spiralized or julienned*
- Extra-virgin olive oil, for drizzling
- Lemon, for squeezing
- Sea salt and fresh black pepper
- 1 cup cubed tofu (optional)
- For the tahini sauce: (this makes extra)
- 1 tablespoon extra-virgin olive oil
- 5 tablespoons tahini
- 1-2 tablespoons fresh lemon juice
- ½ garlic clove, minced
- 4 tablespoons nutritional yeast
- 2 teaspoons maple syrup or honey
- 3 teaspoons soy sauce or gluten-free tamari
- ½ teaspoon dried turmeric
- ¼ – ½ cup water, start with less, gradually add more
- Sea salt and fresh black pepper
