    1. 2 tablespoons extra-virgin olive oil
    2. 1 large yellow onion, chopped
    3. ½ teaspoon sea salt
    4. 1 (3-pound) butternut squash, peeled, seeded, and cubed
    5. 3 garlic cloves, chopped
    6. 1 tablespoon chopped fresh sage
    7. ½ tablespoon minced fresh rosemary
    8. 1 teaspoon grated fresh ginger
    9. 3 to 4 cups vegetable broth

Black Bean Burger

  1. This delicious black bean burger has such a great combination of spices and herbs which will create a mouthwatering taste with every bite. This meal takes about 30 minutes to prepare. Here is a list of the exact ingredients.
    1. 3 cups cooked black beans, drained and rinsed
    2. ⅓ cup grated yellow onion*, (about 1/2 medium)
    3. 2 garlic cloves, minced
    4. 2 chipotle peppers from a can of chipotles in adobo, diced, plus 2 tablespoons adobo sauce
    5. 1 tablespoon tamari
    6. 1 tablespoon balsamic vinegar
    7. 1 teaspoon cumin
    8. ½ teaspoon sea salt
    9. ½ teaspoon black pepper
    10. 1 egg**
    11. 1 cup panko breadcrumbs
    12. Extra virgin olive oil, for brushing
    13. Cooking spray, if grilling
    14. Hamburger buns and desired fixings, for serving

Tahini Zucchini Noodles

  1. This veggie – based recipe is great if you want a healthier alternative to regular pasta. Another great part of this recipe is the tahini sauce which is a flavorful and perfect seasoning for these zucchini noodles. The prep is a little longer but worth it. Below is a list of ingredients.
    1. Noodles:
      1. 2 cups kale, chopped
      2. 2 medium zucchinis, spiralized or julienned*
      3. Extra-virgin olive oil, for drizzling
      4. Lemon, for squeezing
      5. Sea salt and fresh black pepper
      6. 1 cup cubed tofu (optional)
    2. For the tahini sauce: (this makes extra)
      1. 1 tablespoon extra-virgin olive oil
      2. 5 tablespoons tahini
      3. 1-2 tablespoons fresh lemon juice
      4. ½ garlic clove, minced
      5. 4 tablespoons nutritional yeast
      6. 2 teaspoons maple syrup or honey
      7. 3 teaspoons soy sauce or gluten-free tamari
      8. ½ teaspoon dried turmeric
      9. ¼ – ½ cup water, start with less, gradually add more
      10. Sea salt and fresh black pepper
    3. For garnish:
      1. ¼ cup chopped fresh basil
      2. ¼ cup toasted pine nuts
      3. Pinches red chili flakes
      4. ¼ cup micro arugula sprouts (optional)
